Ok some recipes for you :)  let me know if you need more details or any help!

Quinoa Stuffed Peppers/ slow cooker and oven version :)

1/2 onion, diced

minced garlic- as much as you want.. 1 tsp

heat in a medium skillet until the onions are soft with a little olive oil.

Add 1 cup quinoa

1 can of diced tomatoes- any type you want! and 1 can of water

add some salt, pepper, and chili powder (as much as you want)

Let that simmer for 20 min, covered. Sometimes I do add tofu crumbles after the quinoa is done because it just needs to be heated through.

Meanwhile cut the peppers how you would like. This picture they are whole, sometimes I half them.

After the quinoa has cooked, put them into the peppers..I had an extra can of diced tomatoes and I put about half on top of the stuffing.

Bake in over 425 for about 20 min until the peppers are getting tender.

if using the slow cooker- put on low and last time I did it (picture above) I let them cook for about 3 hours.

Add whatever type of cheese you would like at the end and let melt and ENJOY some YUMMINESS!
